Whether you’re a Meatless Monday vet or trying it for the first time this week, it’s easier to stay committed to cutting back on saturated fat and adding more fiber, vitamins, and minerals to your meals when you've banked away a few tricks on how to refresh your favorite recipes. Make these simple substitutions and enjoy carnivorous favorites, like tacos, burgers, and BLTs, meat-free.

Take over taco night: Use protein-packed lentils in place of ground beef. They’re less expensive than meat and cook up in about 30 minutes.

Build a better burger: Mash protein and fiber-packed black, white, or pinto beans, form into patties, and fire up the grill. Top bean burgers the same way you would the American classic.

Rethink your Reuben: In place of corned beef, try potatoes—hash brown style. Then stick with all the fixings—sauerkraut, Russian dressing, and Swiss cheese—and you won’t miss the meat.

Fake a Philly cheesesteak: Use meaty-tasting Portobello mushrooms and top with plenty of grilled peppers and onions.

Make a bacon-free BLT: Fake bacon’s taste and texture by topping your sandwich with smoked mozzarella and crumbled pita chips.
