Cool Down without Fattening Up

So you want to have your ice-cream cake and eat it too? The obvious step is portion control. Limit yourself to a serving of about 200 calories, says Heather Bauer, R.D., founder of Nu-Train nutrition counseling center. How many scoops is that? It depends, but to achieve a satisfying quantity-to-calories ratio, you'll need to go low on the butterfat and sugar. Alas, these two ingredients give ice cream its rich flavor and velvety thickness, says Edgar Chambers IV, Ph.D., a professor of sensory analysis at Kansas State University. "To mimic that combination at lower calorie counts, manufacturers cut the cream, add thickeners, and use artificial sweeteners." The result: wretched.
