Veggie and Stuffing Frittata
If your holiday guests bypass the vegetables when they hit the buffet line, don’t let leftover greens go to waste. Veggies like broccoli, cauliflower, and green beans make one tasty frittata—especially when stuffing is in the mix. Whisk 12 egg whites with 1/2 cup of low-fat Cheddar cheese, 1/2 teaspoon of salt, and 1/8 teaspoon of pepper. Set aside. In a skillet, sauté 2 tablespoons of diced onion for 2 minutes and add 1/2 cup of veggies. Cook for 2 minutes. Add the vegetables to the egg mixture. Cover the bottom of the skillet as best you can with 1 cup of stuffing. Pour the egg and vegetable mixture over the stuffing. Cover and cook for 5 minutes. To serve, place a plate over the top of the skillet, and then flip the skillet so the frittata is on the plate with the stuffing on top. Makes 4 servings.
